So has summer started yet?  I dug my sweater out of the closet again for another cold, rainy day.  But I got through it.  Mostly with the help of these donuts. 😉

Truthfully, baked donuts don’t necessarily have too many redeeming qualities other than that they sound healthier.   They are like little cakes you can fully justify eating at breakfast.  Delicious, lovely little coffee cakes in donut form, ready to devour with your cup of coffee.  Soft Baked Chocolate Chip Coffee Cake Donuts

 

I’ve fallen for this cake as breakfast thing before….  But as long as we are honest about it, I say bring it on.  Why not throw some chocolate chips on top, and maybe a healthy layer of brown sugar and butter.  At least they are baked and not fried, lol.

But seriously, one bite of these little babies and it is worth a few more minutes in the treadmill.   Go ahead and enjoy, it’s the weekend and we all deserve a treat 🙂Soft Baked Chocolate Chip Coffee Cake Donuts

Soft Baked Coffee Cake Donuts

Donuts

  • 1 and 1/2 Cups All Purpose Flour (6.75 Ounces)
  • 1/2 Cup Sugar (3.5 Ounces)
  • 1/4 Cup Vegetable Oil
  • 1 and 1/2 Teaspoons Baking Powder
  • 1/2 Teaspoon Cinnamon
  • 1/2 Teaspoon Salt
  • 1 Large Egg
  • 3/4 Cup Milk
  • 1/2 Cup Chocolate Chips (optional)

Crumb Topping

  • 3 Tablespoons Butter (Diced)
  • 1/3 Cup Brown Sugar (2.25 Ounces)
  • 1/3 Cup All Purpose Flour (1.35 Ounces)
  • 1/2 Teaspoon Cinnamon
  • 1/2 Cup Chocolate Chips

Crumb Topping

  1. In a small bowl, whisk together the sugar, flour and cinnamon. Add in the diced butter (it is best to use cold butter). With your hands or a pastry blender work the butter into the flour mixture. It will begin to look sandy, with some slightly larger clumps. Stir in the chocolate chips and set aside. Or cover and refrigerate overnight until ready to use.

Donuts

  1. Preheat the oven to 350 degrees. Lightly grease the donut molds.

  2. Whisk together the flour, sugar, baking powder, salt and cinnamon. In a separate bowl whisk together the oil, milk and egg. Add the wet ingredients to the dry ingredients and gently combine. Add in the chocolate chips if desired.
  3. Divide the batter between 12 donut molds. Top with crumb topping. Bake for 14-15 minutes or until a toothpick inserted into one comes out clean. Allow to cool for 5 minutes in the pan, then remove to a cooling rack.
